Silly simple chicken recipes for my friends who don’t cook.

I have friends that don’t cook. Which was really fine until this virus came around and forced us all inside. I didn’t cook either for a long time.

Then I got divorced from the cook in the family and I had to feed three children. All of the “recipes” below are super easy.

These were recipes I could whip up and have done in 30 minutes after a long day at work.

Now that the kids have all grown up, I take an even simpler approach.

Most dinners before my son came back from college were comprised of chicken breast or chicken tenderloins, seasoned, with a side of steamed veggies. I could have dinner made in 15 minutes.

Depending on how much I’m cooking and how fast I want to be done I either cut up the chicken and sauté on the stovetop or put whole pieces of chicken in a baking dish.

I like to use the curry spices and mix them with coconut milk (the kind in the carton, not the can but you can use either) and pour over chicken and bake. So easy.

Any of the other spices I just sprinkle on as I’m sautéing or sprinkle on the chicken and bake for 15-20 minutes. So easy. Below are some of the recipes I used to cook for my kids.

Make sure you cook chicken all the way through, just cut it to make sure it’s not pink.

Silly simple chicken recipes:

I usually estimate ½ -1 chicken breast per person. I usually cook more than I need and use the leftovers for lunch the next day.

Any of these recipes can be served with steamed veggies, rice or risotto. I like steamed veggies because they can be done in 10-15 minutes. I always keep a bunch of frozen veggies in the fridge but fresh is best.

Italian chicken

  • Chicken breast
  • Cut into pieces
  • Put in skillet with a generous splash of Italian Dressing. (2-3 tablespoons)
  • Sauté until cooked through.

BBQ Chicken

  • Chicken breast
  • Cut into pieces
  • Put in skillet with a generous splash of BBQ sauce, (2-3 tablespoons)
  • Sauté until cooked through.

Spaghetti Chicken

  • Chicken breast
  • Put spaghetti sauce in bottom of baking dish
  • Put chicken on stop of sauce
  • Cover with more spaghetti sauce and shredded mozzarella.
  • Bake covered for 15-20 minutes. Bake uncovered for the last 5.

Lemon Chicken

  • Drizzle a little olive oil in the bottom of a baking dish
  • Slice lemons and line dish
  • Place chicken breast on top
  • Sprinkle with some herbs: basil, lemon pepper seasoning, ms dash, or dill. NOT ALL OF THESE.
  • Bake at 350 for 20 minutes or so.
  • Remove lid and bake for another 5 mintues or so.
  • Serve with rice, risotto or steamed veggies.

Curry Chicken:

  • Put some coconut milk in a baking dish. Should cover the bottom. I use the kind you use on cereal as its lowered fat but if you want a richer dish use the canned kind.
  • Dump in some curry. Any kind. I like the yellow. Stir it up.
  • Throw in some chicken and veggies if you want. Diced or whole.
  • Bake at 350 for 20-25 minutes.

Mexican chicken:

  • Get some Tajin classic seasoning.
  • Put some oil in the bottom of a baking dish
  • Sprinkle tajin seasoning on bottom
  • Put in chicken
  • Sprinkle more on top
  • Bake at 350 for 20-25 minutes
